From the slopes of Sabanilla de Alajuela, Las Lejas is run by third- generation farmers Oscar Chacón and Francisca Cubillo - pioneers of Costa Rica’s natural and honey processes. Their “Black Diamond” method leaves the mucilage intact, fermenting anaerobically for 100 hours before drying for 15-20 days on raised beds. Each lot is a balance of bold innovation and deep respect for the land
